Cold Stone turns into 'Fluff'

A 1999 Ohio University graduate opened a new bakery yesterday on Court Street, focusing on growing and producing its products locally and organically.

Fluff Bakery & Catering, 8 N. Court St. #1, was opened by married couple Jessica and Jason Kopelwitz in Athens because Jessica graduated from the OU College of Business in 1999 and wanted to be a part of the community again, Jessica Kopelwitz said.

(After I graduated) I bounced around bakeries

learning from others and baking and then I decided to open my own shop she said.

The bakery, which took the place of Cold Stone Creamery after its owners did not renew their lease in July, serves specialty desserts, breads, breakfast foods and sandwiches, Jessica said.

(We are different than Cold Stone because) we don't have ice cream she said. Instead

we offer everything from savory breakfast cakes to sandwiches to mini-cheesecakes.

Fluff is focusing its efforts on serving locally grown, organic foods to help give back to the community, she said.

The bakery will be working with Starline Organics, 18635 River Road; Jackie O's Pub & Brewery, 234 W. Union St.; and Silver Bridge Coffee Company in Gallipolis to provide patrons with local food, which will stimulate the local economy, Jessica said.

Jessica's brother and sister own Starline Organics, which will deliver fresh food and produce to the bakery daily, Kopelwitz said.

Patrons of the bakery who came for its first day of business were excited about the bakery's focus.

Stacie Baldwin, a Hocking College culinary student, said she is glad the bakery is trying to use local and organic foods.

I believe it is incredibly important to have locally and organically grown foods

Baldwin said.

To become a bigger part of the Athens community, Fluff will host Community Bake Nights, which will allow residents to submit family recipes in a competition to be displayed on the menu, she said.

I want to work with these individuals to showcase their goods in the shop

she said.

Kopelwitz said all the bread sold in the bakery is made from scratch daily and that Boar's Head meats, cheeses and spreads will be offered at the Grab N Go sandwich section.

You know that you are getting quality food when you walk in our doors

Kopelwitz said.

Joel Stigliano, an OU graduate student who also came to Fluff for its opening, agreed with Kopelwitz' statement about the food's quality.

[The food] is great

Stigliano said. It's great to have an alternative to Jimmy John's and Wendy's.
